Ultra Gel – a Review…

I should have written this post long ago.  I can’t believe I ordered my first bag in November of 2013. Actually, it’s the only bag I’ve ordered, and I still have over half the bag left.

When I bought it, I tried looking up everything I could about it. I was impressed with the fact that it comes with it’s own 150 page cookbook, which I have used. (It isn’t available any more, but you can buy it from third parties.) I’ve even used it to thicken my jams and jellies, which you should not do if you are canning them.

I know it says you can use it in canning but Ball says you really shouldn’t.  I guess it would depend on how much you use.  It’s just not worth it to me.  You can always thicken stuff later and Ultra Gel is great because your food doesn’t have to be hot to thicken. If you’re just making enough jam for sandwiches, it’s great.

I have one thing I wish to add, when adding this to your recipe, it doesn’t matter whether it’s cold or hot, it does require that you begin stirring immediately. It can clump up if you wait to long, like I have done in the past.  It does seem to take a little more of this than it does corn starch.

It’s similar to clear jel, but not the same. Clear jel, like many other thickeners, requires heat to make it thick. Ultra gel will thicken without heat.
